Pizza Amore!

In our household, we LOVE pizza. Meat pizza, supreme pizza, veggie pizza, fruit pizza (!), and cheeeeese pizza. To us, you can't get much better than a crispy crust, drenched in tomato sauce, and loaded with mozzarella cheese and tons of fresh ingredients.

I am dying to make my own pizza crust, but things have been crazy lately, so we have been using store bought crusts, then getting creative with our toppings! Serve it up with a nice side salad and some fruit, and we like to add a glass of vino ;)
Enjoy this deliciously easy recipe for our favorite pizza!

Easy Pizza

Ingredients:

pizza crust (our fave is this - the thin and crusty one.)
1 cup sauce (our fave is the Classico - Tomato & Basil)
2 cups shredded mozzarella cheese
your own favorite ingredients!
(we love turkey pepperoni, spinach leaves, red onion, olives, artichokes, mushrooms, tomato slices, and fresh mozzarella.)

Directions:

preheat oven to 400 degrees. (sometimes crusts differ on degrees and cooking times, so read the crust package!)
cover the crust with the sauce, then the cheese.
sprinkle with the ingredients.
bake for around 12 mins (again check your crust's baking time), until the cheese is bubbling.
serve immediately! enjoy!

Fashion Friday - "White-Hot Summer"

I don't know about yall, but this feels like THE hottest summer in the history of summers. For some reason, I thought that North Carolina was going to be cooler than Tennessee, but it is super hot here as well....I think it was in the 100's today! I feel like all I can be comfortable in is light weight cotton dresses, or anything white. Dark colors are absolutely out of the question. We spent a wonderful weekend in Little Rock recently celebrating the beautiful marriage of Russell and Katie! Russell has been a long-time friend of John's; they went through the Fellows Program together in Memphis, and they will BOTH be attending Duke Business School in the fall! We had a wonderful time at the rehearsal dinner and wedding reuniting with the Fellows, and exploring Little Rock!

Congrats Katie and Russell --- we can't wait for all the adventures we will have together in NC!

Home-made Fruity Popsicles

This is such a fun and fruity treat that we have recently discovered. John LOVES all things fruity, so I have been wanting to try a healthy fruity popsicle recipe for awhile now. It is perfect for summer and so refreshing! AND you can really make them in so many different ways, with different flavors, different fruits, different juices, etc....

I found the recipe in Self Magazine, and I cannot seem to locate the recipe at this time, but it is very simple, and I've actually made it a bit easier too. I bought a set of 4 popsicle molds at target and this recipe fills all four molds.

Fruity Popsicles

Ingredients:

1 1/2 cup fruit (for top layer)
1 cup fruit (for bottom layer)
2 tbsp yogurt (for middle layer)
3 tbsp favorite fruit juice (divided)

Directions:

1. slice up top layer fruit. (the layers will go upside down in the molds, so the top layer will be the first layer that you make.) place in food processor (or blender) along with 2 tbsp of fruit juice. blend well. carefully pour, or spoon in mixture into molds. place in freezer for 30 mins.

2. take out molds and add the yogurt to each mold. place in freezer for 10 mins.

3. while the molds are in freezer, prepare this step. slice up bottom layer fruit. place in processor with remaining 1 tbsp of juice. blend well. pour in mixture into molds. freeze for at least 2 hours.

4. run molds under warm water to loosen. wiggle gently until they pop out.

5. enjoy!!

(Our favorite concoctions are: strawberry/vanilla yogurt/blueberries (from picture), strawberries/cherry yogurt/peaches, and strawberry/blackberry yogurt/blackberries. For the fruit juices, we have used everything from orange juice, to grapefruit juice, to peach tea. Obviously you can come up with so many different combinations, and find your favorites from them! I have to say that since our first batch, our freezer has not seen a day without these little treats inside ;)

4th of July Wknd

We had an AMAZING weekend at the lake celebrating the 4th. We spent a lot of time in the water, soaking up the sun, chatting, reading, playing Bananagrams, grilling out, and shooting off fireworks! It was a blast hanging out with the fam, and my parents ended up coming up last minute --- I'm sooo glad they got to come. The kids were a hoot and loved jumping off the dock into the water --- they have gotten so brave! Can't wait til the next lake weekend!
