30 in the Big Apple

This past weekend, my two college besties came up to visit!  To meet Andrew, and to celebrate our 30th birthdays (eeeek!!) in NYC!

They are truly the best, and I'm so thankful for their friendship, and all we've been through.
We go back, way back :)

We've been friends for 12 years!

On the train into the Big Apple!

All dolled up for our birthday night out!

Dinner at Fig and Olive (so good!)

Next up was drinks at Stone Rose Lounge at Columbus Circle.
Such a cool atmosphere, with an amazing playlist (Beyonce, Britney, and Spice Girls!)

Breakfast the next morning at Sarabeths, Central Park.
Beautiful day, beautiful friends, delicious food!

Followed by a walk around Central Park, a stroll down 5th Avenue...

Rockefeller Plaza

NYC Public Library

Lunch at ABC Kitchen (so cute and swanky)

And of course, we couldn't leave NYC without a stop at Carrie Bradshaw's Apartment!

"They say nothing lasts forever: dreams change, trends come and go, but friendships never go out of style."

The BEST way to ring in the 30, with your best friends!
Thank you girls for such a FABULOUS weekend!!

Frozen Reese's Peanut Butter Pie

You may have seen my post about all things Peanut Butter and Chocolate.  I shared this picture, and revealed that I HAD to have it for my birthday cake this year....

Frozen Reeseā€™s Peanut Butter Pie

Well, I couldn't wait til my birthday.

I made this treat last weekend when friends came over for dinner and it was divine.  Even John, who typically only likes fruity desserts, loved it! It couldn't be easier, either!  No bake, and you mix everything in ONE bowl!  ;)

I adapted it some from the original recipe, didn't add the second layer of cool whip, and also did a different crust.  Here's my recipe, along with pics!

Frozen Reese's Peanut Butter Pie

1 8oz package reduced fat cream cheese
1/2 cup creamy peanut butter
1 cup sugar or sweetener
1/4 cup skim milk
1 8oz container fat-free Cool Whip
1 pre-made Graham Cracker Crust (or Oreo)
3 tbsp Light Hershey's Syrup
2 bags Reese's Minis Cups (or Reese's Pieces)

Mix first 4 ingredients together until smooth
(I used my Kitchen Aid mixer, but you could do this by hand)

Fold in Cool Whip until well blended
(You can also add 1 bag of Reese's Minis to mixture)

Pour mixture over pie crust and drizzle with chocolate syrup, and decorate with remaining bag of Reese's Minis

Chill for at least 4-6 hours (or overnight)

Let sit at room temperature for 15 minutes to soften before serving.  Enjoy!

Such an easy and delicious dessert - perfect for guests or a pot-luck!

Easter Weekend

We had a fabulous Easter Weekend!
Beautiful weather, a wonderful visit from John's mother, and a very special time celebrating with our precious boy :)

(and he celebrated by sleeping 9 hours straight, each night!)

Andrew is 15 weeks old!

I hosted Easter Brunch, and make some yummy treats!
I got this recipe book for Christmas, and used her Easter menu.
I made this (so good), these (so adorable), these (eh) , and this (amazing).

Also whipped up some of Gwynnie's muffins :)

PW Carrot Cake (no nuts)

Having Andrew's "Gigi" here was such a treat!  She babysat while John and I did super romantic things, like getting our hair cut :)  We did do a little shopping, which was quite a luxury without the stroller and baby in tow!

She is such an amazing woman - so grateful for her love and grace!  Andrew is so blessed.

We took a few pics after the Easter service at Church.  It was a lovely service (I spent some of it in the cry room - but still sang my heart out to some of my favorite songs (this one especially!)

Then we "gave" Andrew his Easter basket!  Which I had so much fun putting together :)

This one may have been for Mommy :)

I think he's a fan ;)

Hope y'all had a wonderful weekend!!
