Currently...

I've done of few of these posts before, but it's been awhile, and I think it's time for another :)

Currently loving...



This DVD is absolutely amazing. It reminds me a lot of the Pure Barre workouts, the way it does small isometric movements that target arms, thighs, abs, and backside.  You can break up the workouts or do the whole workout at once.  I usually do 3-4 at a time, and will combine it with a little cardio too. 




This little gem is pretty great.  I just picked it up recently, and I am loving how much moisture it has put back into my dry hair.  It's just a 2-minute mask, and I do it about once a week.  Very easy to use, and leaves my hair feeling nourished and silky soft.



This has SAVED me this winter.  Perfect amount of glow to the skin, without looking orange or fake.  And it smells like chocolate.  Yep.  Sold.

I've been living in this cozy sweatshirt....it's actually embarrassing how often I wear this.  Pair it with some leggings, and I'm good to go.  And it's cute enough to wear out for errands.  


Black Tank Maxi Dress

I don't have this exact one, mine's from F21 but virtually the same, and I've been pairing it with everything lately.  Whether it's a moto jacket, a girly cardigan, or a just a fab statement necklace, this look has been my go-to for the past few weeks.  



Even though it was freezing this year, I absolutely loved my Easter outfit.  I tried to get away with wearing the cutest brocade skirt with this, but alas, the pants had to be worn.

Salmon Cakes - yummo!!  Recipe coming soon :)



Baked Kale - our fave!
(kale leaves spread evenly on baking sheet.  drizzle a little olive oil, and dash of salt.  bake at 350 for 15 minutes).



Detox Water -
2 quarts water, 1 medium cucumber, 1 lemon, 10-12 mint leaves. Steep overnight in fridge and drink every day!



Currently treating myself to...

McDonald's Hazelnut Iced Coffee.  Oh. My. Yum.
This is usually my Saturday treat :)

Seeing Spots

We made it to Friday!  This calls for a celebration :)  
How about some polka dots, pretty balloons, and sparkly nail polish!
Well this week's Fridays Fancies let me do just that.

Eeek!  Isn't this just a fun outfit!?  It's all centered around this gorgeous polka dot silk blouse, which you may or may not have seen before :)  And I swear I didn't plan it to match with my blog colors!  I guess I kinda like turquoise and pink!  

Hope y'all had a fabulous week, and are geared up for an even better weekend!
I have to admit, hubs and I have ZERO plans, and I'm definitely looking forward that just that.
Relaxing, sleeping in, breakfast brunch in bed, and lots of Netflix.  We are supposed to have amazing weather tomorrow, so we might squeeze in picnic at the park too :)

Lemon Baked Chicken

Do y'all ever get into a cooking rut?  I personally have felt like I've been cooking the same 4-5 weeknight meals for months now.....
tacos, salmon, chicken fingers, spaghetti, repeat.

So, I decided to plop down on the couch and do it the old fashioned way....Cookbooks.  
My embarrassingly large collection of cookbooks helped me find some new and EASY weeknight meals.  

And the shining star of the collection....

Inside, Ina got me drooling over the many delectable dishes, and I started to plan out a new menu for the week.  First up: Lemon Baked Chicken.  

This dish was so easy to prepare, super healthy, and the flavors were outstanding.  John and I love all things lemony, and we absolutely loved this recipe.  Perfect for a weeknight, or when you need to impress company with very short notice :)


Lemon Baked Chicken

Ingredients:

1/4 cup olive oil
3 tablespoons minced garlic
1/3 cup dry white wine*
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

(*I used chicken stock, b/c I didn't want to open a bottle of wine for just a few tablespoons)


Directions:

Preheat the oven to 400 degrees F.

Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.
