Avocado Chicken Enchiladas


I found this gem of a dish on Pinterest awhile back, and I made it when my parents were in town.   It is a perfect meal for a crowd - easy to make and has such a fresh, summery, and light taste to it. 
If you're a fan of avocados, and might like a little spice in your life, I would highly recommend this meal!  Serve with mexican rice, salad, or chips and salsa.  And maybe a margarita or two!?  :)

Avocado Chicken Enchiladas

Ingredients:

for the sauce:
1 tablespoon butter
1 Serrano pepper, minced (leave in seeds for more spiciness!)
2 garlic cloves, minced
1 tbsp flour
1 cup chicken stock
1 tsp cumin
1/4 tsp salt
1/4 tsp fresh ground pepper
1/4 cup chopped cilantro
1 cup medium salsa verde
1/2 cup fat free sour cream

for the enchiladas:
3 cups chopped cooked chicken breasts (about 4 breasts)
8 oz Monterrey Jack Cheese, shredded & divided
1 small yellow onion, chopped
2 avocados, peeled and chopped
8-10 flour tortillas


Directions:

Preheat oven to 375°F.
In a medium sauce pan, melt butter over medium-high heat. Saute serrano pepper and garlic, for 1 minute. Stir in flour, constantly stirring, and cook for 2 minutes. Whisk in the chicken broth, cumin, salt and pepper and bring to a low boil. Once boiling, whisk in the sour cream, salsa verde and cilantro. Remove from heat.
Spray/grease a 9×13 baking dish. Add 3/4 cup sauce to the bottom of the pan. Add chicken, Monterrey Jack Cheese, onion and avocado to the center of each tortilla and roll, placing seam-side down in the dish. Pour the remaining sauce over the enchiladas. Top with leftover cheese and bake for 15-20 minutes or until bubbling. Serve immediately.

Bridges, Baths, and Budapest!

Ok - back to some more Europe posts -- this stop, Budapest, Hungary.  We debated long and hard about making the trek to this city, and we were SO glad that we ended up going.  It was absolutely breathtaking and we really loved our time there.  

We arrived to Budapest in the late afternoon, and found our way to the most AMAZING restaurant called "Menza".  It had beautiful outdoor seating and the meal was fantastic.  We had drinks, appetizers, salads, and 2 entrees -- all for $25 USD.  Incredible!

After dinner, we strolled down the main street in Budapest, "Andrassy Ave" - almost like a Hungarian "Champ Elysees" and made our way down to the Danube River to catch the sunset.

It was the most beautiful night!  We sat there on the bank of the river taking it all in and it was such a perfect and romantic evening.  This was one of my favorite places in all of Europe.
On the way back to the hotel, we of course stopped for gelato and then it was off to bed!

The next day we took another Free Walking Tour all around Buda and Pest - it was really worthwhile and we enjoyed it so much.  Highlights of the tour included:

Vorosmarty Square
Deak Square
St Stephen Basilica
Synagogue
Parliament
Royal Palace
Chain Bridge 
and much more!

We had a delicious authentic Hungarian lunch that day that consisted of goulash and duck pasta - yum!!  


That afternoon, we got to explore the House of Terror Museum - which is a memorial to the Hungarian victims of the fascist and communism dictatorial regimes in the 20th century.  The actual building is where the victims were tortured, interrogated, and even killed.  It was quite a powerful and terrifying place - but I would highly recommend it for the history and impressive exhibit.

Dinner that night was at a delicious Italian restaurant - with amazing pizzas! - right on the Danube river.  




The next day, we enjoyed the morning wandering around the Centrall Market Hall - an indoor market with anything and everything you could imagine.  From fruits and veggies, Hungarian chocolates and candies, and scarves, clothes and toys.  


From the Market, we made our way across the Szabadsag Bridge over to the Cave Church, Liberty Statue, and then trekked all the way up the mountain for amazing views of the city.










That afternoon we ventured out to the famous Szechenyi Thermal Baths - which were absolutely incredible!  We weren't allowed to take our cameras into the baths, but I did sneak my iPhone in for a quick peek...



We spent half of the day here, and it was SO much fun -- I will never forget this experience!  If you ever find yourself in Budapest - you must visit these amazing baths.

The next day, we headed out for Vienna, Austria!!

If You Really Knew Me...






I have seen this post on several blogs lately, (Liz and Megan's were my faves) and I thought it would be fun to do it too!

If you really knew me....

You'd know that I love my family more than anything.  I am such a Daddy's girl and I talk to my mom almost every day.  I feel so blessed to have such loving and encouraging parents.

You'd know that I hate pickles and mustard.  It makes me almost gag just typing them on the computer.
I'm that girl who sends back the burger or sandwich if it mistakenly has either of these on it.

You'd know that I'm terrified of spiders and flying insects.  I pretty much have a full-blown panic attack if I hear a buzzing around me...even if it's a fly.  I am petrified of getting stung or having a spider bite. Eeekkkkkk.  One time a spider was crawling on the inside of my windshield while I was driving down the interstate and I literally almost passed out.

If you really knew me, you would know that my favorite movie is "My Best Friend's Wedding" and I can quote almost the entire thing.  AND I know the lyrics to the entire soundtrack.  Julia Roberts is one of my favorite actresses too...and Dermot Mulroney?   Yes please.  I wish I could set my alarm to him singing me "The Way you Look Tonight".  Hmm, how can I make that happen?  ;)

If you really knew me, you'd know that I would pick the beach over the mountains any day of the year.
Growing up on the beach would probably be any child's dream - and it was my reality.  I have the most amazing memories of the beach, and it is always the first choice for a vacation trip for me.  Sun, sand, ocean waves and sea air...is perfection to me.

You'd know that I ran a 1/2 marathon a couple of years ago with my best friend, Ashley!  Finishing that race was one of the proudest moments for me, not being a runner WHATsoever.  And I did it just 1 1/2 months after having a major surgery.  I'll never forget that race, and the 22 degree weather that December day!  Brrrrrrr.

You'd know that I love sleeping in and
I'm a sucker for reality TV.  A lazy Saturday spent in my pajamas with HGTV or E on the tube equals a big ole smile on my face.  Oh, and french toast.  Yes.

If you really knew me, you know that I only ate about 5 different foods when I was growing up.  Quesadillas and nachos being the two main ones.  I have since majorly come out of the picky-eating funk, but Mexican food is still my number one choice for dinner.

You'd know that I found my true love and best friend in my husband.  We met in college and I can remember to this day what we both were wearing and how I felt when I met him.  He gave me butterflies then, and still gives me butterflies every day....8 years later.

If you really knew me, you would know that I can recite all 44 presidents in order, I played volleyball and tennis in high school, and I have a mildly embarrassing obsession with Lauren Conrad and Justin Timberlake.

You'd know that I love Jesus with every ounce of me, and I am in awe of His unfailing love and perfect grace.  He is my rock and my salvation and I strive daily - yet fail miserably - to be just a glimmer of His light.

If you really knew me, you know that if I could have been anything when I was growing up, it would have been a three way tie between a dolphin trainer, a gymnast, and a Broadway star.  Yeah, none of those dreams were fulfilled, but I LOVE my current job and I wouldn't change it for anything.
Who am I kidding - getting to ride dolphins all day long - AMAZING!

I hope you had fun getting to "KNOW" me a little better!  I hope I didn't scare any of you off ;)
