Home-made Fruity Popsicles

This is such a fun and fruity treat that we have recently discovered. John LOVES all things fruity, so I have been wanting to try a healthy fruity popsicle recipe for awhile now. It is perfect for summer and so refreshing! AND you can really make them in so many different ways, with different flavors, different fruits, different juices, etc....

I found the recipe in Self Magazine, and I cannot seem to locate the recipe at this time, but it is very simple, and I've actually made it a bit easier too. I bought a set of 4 popsicle molds at target and this recipe fills all four molds.

Fruity Popsicles

Ingredients:

1 1/2 cup fruit (for top layer)
1 cup fruit (for bottom layer)
2 tbsp yogurt (for middle layer)
3 tbsp favorite fruit juice (divided)

Directions:

1. slice up top layer fruit. (the layers will go upside down in the molds, so the top layer will be the first layer that you make.) place in food processor (or blender) along with 2 tbsp of fruit juice. blend well. carefully pour, or spoon in mixture into molds. place in freezer for 30 mins.

2. take out molds and add the yogurt to each mold. place in freezer for 10 mins.

3. while the molds are in freezer, prepare this step. slice up bottom layer fruit. place in processor with remaining 1 tbsp of juice. blend well. pour in mixture into molds. freeze for at least 2 hours.

4. run molds under warm water to loosen. wiggle gently until they pop out.

5. enjoy!!

(Our favorite concoctions are: strawberry/vanilla yogurt/blueberries (from picture), strawberries/cherry yogurt/peaches, and strawberry/blackberry yogurt/blackberries. For the fruit juices, we have used everything from orange juice, to grapefruit juice, to peach tea. Obviously you can come up with so many different combinations, and find your favorites from them! I have to say that since our first batch, our freezer has not seen a day without these little treats inside ;)
