Sweet Potato Fries



I've said before, I'm not the BIGGEST fan of veggies, but I have definitely found a few that I have grown to love, and that I'm pretty much making on a weekly basis.  
One of the EASIEST veggie sides that both John and I are obsessed with is Sweet Potato Fries.  
They are so good, that I forget I'm even eating veggies!  :)

This is a super easy recipe, and just in case you love sweet potato fries, and haven't made them yourself, you're in luck!  Here's my go-to recipe:

Sweet Potato Fries

Ingredients:
1 large sweet potato (for 2 people)
1 tbsp EVOO
2 tsp sea salt
1 tsp ground pepper
1/2 tsp ground cinnamon 
1/2 tsp paprika

Directions:
Preheat oven to 425 degrees.
Cut sweet potato into thin fries.
Line cookie sheet with foil.
Place fries in even layer on foil.
Drizzle the EVOO.  Sprinkle with remaining ingredients.  Mix with hands or spatula.  
Bake in oven for 18 minutes.  Flip fries.
Bake for an additional 18 minutes.  

*Oven times and temperatures may vary so check on fries 1/2 way through second baking time.
*Adjust spices to your taste :)

Great idea, I looove sweet potato fries, but always make the frozen kind... You should try same spices with evoo, but sautéeing in a pan some squash, orange bell peppers are delicious just cut up, or seasoned steamed asparagus (with hollandaise is possible), all great veggie choices! cat
