Sweet Potato Casserole


(This is one of my favorite recipes from the holiday season - wanted it to share it with y'all!!  It is so good, even if you're not a sweet potato fan, I am almost positive you will love this...and adding enough cool whip makes almost anything edible!)

Sweet Potato Casserole  
(my mom's recipe)   
                    

Ingredients:


6 cups cooked mashed sweet potatoes
2 cups sugar
4 eggs
2 teaspoons vanilla
2/3 cup milk
1 cup margarine


Topping -  combine the following:


1 cups packed brown sugar
2/3 cup all purpose flour
2/3 cup margarine
2 cups chopped nuts
 Directions:

Beat the first 6 ingredients (no topping) until smooth.
Spoon into a large, shallow, greased casserole dish.

Sprinkle the topping over the casserole.
Bake at 350 degrees for about 45 minutes.
This recipe may be halved, like the one in the picture above.  If so, only bake for 30 minutes.

When I was younger like elementary school and was a "mother's helper" that mom made this recipe--and I've been dying to get it EVERY Holiday season :) Thanks so much for posting! Happy Tuesday!!!
