Sweet Potato Casserole


(This is one of my favorite recipes from the holiday season - wanted it to share it with y'all!!  It is so good, even if you're not a sweet potato fan, I am almost positive you will love this...and adding enough cool whip makes almost anything edible!)

Sweet Potato Casserole  
(my mom's recipe)   
                    

Ingredients:


6 cups cooked mashed sweet potatoes
2 cups sugar
4 eggs
2 teaspoons vanilla
2/3 cup milk
1 cup margarine


Topping -  combine the following:


1 cups packed brown sugar
2/3 cup all purpose flour
2/3 cup margarine
2 cups chopped nuts
 Directions:

Beat the first 6 ingredients (no topping) until smooth.
Spoon into a large, shallow, greased casserole dish.

Sprinkle the topping over the casserole.
Bake at 350 degrees for about 45 minutes.
This recipe may be halved, like the one in the picture above.  If so, only bake for 30 minutes.

Easy Cinnamon Rolls



I made this recipe recently, and I HAVE to share it with y'all!  
It was too easy, and delicious not to share it!  
Just remember, if you are planning to make these for the morning, start the NIGHT BEFORE.  The rolls must thaw and then rise overnight and into the morning.  
All it takes is 3 (yes 3!) ingredients, and hardly ANY hands-on time at all.  Your guests (or your hubs) will be shocked that these were made from frozen cinnamon rolls - they are delicious and so moist!  
Enjoy! 


Ingredients:

1 bag Rhodes Cinnamon Rolls (in frozen breads section)
(I found them at Wegmans, but have also heard they are at SuperTarget)
1 pkg Cook and Serve Vanilla Pudding
1 Stick Butter (melted)

Directions:
(night before)

-Spray 13x9 dish with Pam

-Place Cinnamon Rolls in one layer in dish (reserve icing)

-Sprinkle unprepared pudding powder evenly over Cinnamon Rolls

-Pour melted butter evenly over rolls

-Spray a sheet of plastic wrap lightly with cooking spray (I lay it over the baking dish and spray, then pick it up and turn it over so spray side is down) 

-Cover the rolls tightly and refrigerate overnight.

(day of)

-In the morning, remove the thawed rolls and let sit on counter for 30-45 minutes.

-Bake 350* for 15-20 minutes.

-Spread with icing and serve warm!

A Challenge and a Party

When we moved from NC to NJ this summer, I made a promise to myself.  I would host an all-girls Christmas party in 5 months, and I couldn't back out.  It didn't matter if I only invited 2 people, or if I had to invite strangers - but I would have people over, and host a party!

It definitely made me meet new people and reach out to girls, even if it felt awkward or out of my comfort zone at the time.  But guess what?
I did it.  


My new friends!


So thankful they actually showed up!! I was a little nervous there for a minute :)


Lesson learned - challenging yourself, and pushing yourself out of comfort zone may be hard at the time, but it is almost ALWAYS worth it!!  A big thanks to my friend, Lydia who helped me pull this off!

Twenty-Twelve



This year has been truly amazing - yes there have been ups and downs, but mostly ups and exciting times shared with my best friend.  A big move, a month in Europe, 2 surgeries, leaving friends, making new ones, and much much more. 

I am so thankful for the memories and experiences we made in 2012 - and I am in awe of the way God has blessed us in so many ways.  He has remained faithful through it all.
