Pumpkin Poppers

I found this delicious fall recipe on Pinterest, and ended up making them this weekend for a church picnic.  They were divine and were such a hit!  To me, they taste like pumpkin donut holes - covered in cinnamon sugar.  And can you really beat that?  I don't think so :)

So take it from me, make these immediately.  Share with friends.  Or make a cup of coffee, watch HGTV, and eat them all by yourself.  We won't tell. 
Either way, you won't regret making them - and they might just change your life.

Pumpkin Poppers

Ingredients:
1 3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/8 tsp ground cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg 
1 tsp vanilla extract
3/4 cup canned pumpkin
1/2 cup milk

For Coating:
1 stick unsalted butter, melted
2/3 cup sugar
1 tbsp cinnamon

Directions:

Preheat oven to 350 F and spray mini muffin tins with non-stick cooking spray.

Combine flour, baking powder, salt, and spices in bowl and whisk until combined.

In another bowl, mix oil, brown sugar, egg, vanilla, pumpkin, and milk.  Pour in flour mixture and mix until just combined.  Fill mini muffin tins until full and bake 10-12 mins.  

Melt butter in small bowl. Mix sugar and cinnamon in a separate small bowl.  After poppers cool for a few minutes, dip them in the  butter and roll them in sugar mixture.

i love anything pumpkin! i usually go for pumpkin donuts at dunkin donuts, but these look fairly easy to make! i might have to try this over thanksgiving :)
